Espasol, a delicious kakanin (rice pudding), is just one of the attractions that the province of Laguna is famous far. It is made from rice flour cooked in coconut milk, blended with sweetened coconut strips, rolled into cylinders and dusted with toasted rice flour for a heavenly melange of flavors and textures. There are many other delights awaiting visitors in Laguna. There is the town of Lumban with its tradition of exquisitely hand-embroidered pina (pineapple fiber) and jusi (banana fiber) which made elegant shirts and dresses. Paete is renowned for meticulous woodcarving and gaily painted papier mach'e folk figures. Pagsanjan is the most visited town of Laguna. It has one of the country's most awesome natural wonders, the Pagsanjan Falls. Picnickers start the party with an exhilarating canoe ride through river rapids, past large boulders and picturesque gorges leading to the falls. There, they transfer a bamboo raft to go right under the cascading waters and enjoy the refreshingly cool water. After this riveting encounter, a grand picnic is laid out. Espasol, of course, is part of the dessert fare together with other delicacies like maja, a gelatinous coconut milk cake, and butsi, fried glutinous rice and chopped coconut wrapped around pureed beans.
